Cap + Pizza = LOVE

I wasn’t very hungry this afternoon from my very filling late breakfast so I ended up making cappuccino’s when my Mom came for a visit this afternoon. I used a shot of espresso and foamed up about 1/2C of 1% milk. Topped with cinnamon of course!

After my Mom left, I ended up having 3 small clementines. Since my stomach started to grumble around 4:30 pm, I raided my fridge and gathered up all my pizza ingredients!

Pizza Pie

I used:

  • whole wheat pizza dough (used to make 2 x 9″ thin crust pizzas)
  • tomato sauce (plain tomatoes, basil, oregano, crushed red pepper flakes)
  • hot & spicy olive oil (1.5 tsp spread onto each pizza)
  • veggies: onion, garlic, zucchini, mushroom, red bell pepper
  • goat cheese–2 x 40g  servings used on each pizza
  • arugula thrown on immediately after coming out of the oven

My portion: I had half of one of the pizzas

Mmmmmm! This was delish! I left the pizza in the oven for a few extra minutes so the thin crust was very crispy.

Monday Eats

Hey all,

Sorry for the late post but I’ve just been out of sorts all day. I headed over to the gym this morning after my night shift and did 33 minutes on the elliptical (HR 134-142 bpm) and 18 minutes on the treadmill. I alternated jogging and walking at around 4.2 mph and then did a 1 minute sprint at 6.2 mph to finish off. After stretching I did 3 sets of 15 crunches.

By the time I got home I wasn’t hungry…I was HANGRY!!!

Eggs and Salsa

I had eggs with salsa and melba toast. This really hit the spot! While my plan was initially to stay up and not sleep, I found myself nodding off around 11 am. I slept for a few hours and then met up with a friend for coffee:

Cinnamon Dolce Latte

I knew I probably wasn’t going to end up having a proper lunch with the whacked out sleep schedule so I had a grande non fat cinnamon dolce latte.  I also had a clementine when I got home.

I was craving a big salad for dinner so I made my salad with: mixed greens, yellow pepper, 1/2 avocado, red onion, tomatoes and grated carrot. I diced up 3/4 of a grilled chicken breast and dressed the salad post photo with almost 1 tsp olive oil and several tablespoons of balsamic vinegar.

This salad was so amazing I finished off the whole bowl!!! I heartily enjoyed this with a high fibre/high protein pita. There is something about this flavour combination that just does it for me. I was planning on having a green monster afterwards if I was hungry, but I was sa-tis-fied!

Anyhow, it’s off to bed early for me as I’m back at work tomorrow morning.

So this afternoon my friend Susan and I hit the road and went to the quaint little town of Unionville!

We continued to walk around the main street and came upon the most amazing sight:

All these goodies, but alas, I was NOT hungry; nor did I have any desire to bring some of these lovely friends home with me.  I just wasn’t craving chocolate the way I usually do?!

So on my way home I went, where I cracked open my Barefoot Contessa cookbook:

The recipe for her Guacamole Salad can be found here.  I cut the olive oil to 2 tsp for my version, eliminated the jalapenos and only added a dash of cayenne pepper as I didn’t want things too spicy.  It says serves 6 but I think 4-6 is a more reasonable estimate.  I took 1/4 of the batch and placed it on a bed of greens as I knew I was going to need more volume than this!

Overall, I liked the salad. Did it taste like guacamole? Not exactly. But I would definitely make this again and I felt very satisfied with my portion.

I’m finding it really strange that I have stopped having my usual cravings for chocolate and sugary foods. My love for chocolate is legendary and is something that I never refuse. Perhaps I’m sick? Perhaps it’s just a part of my change in eating habits??? Any thoughts? Have I lost my mind? 🙂

Dinner Out!

Dinner tonight was at Canyon Creek, a local steakhouse. I was very hungry by the time we got to the restaurant but didn’t bother with the greasy bread basket. I waited for my entree and side:

I ate about 1/3 to 1/2 of the sirloin steak. I ate all of the veggies. My side salad with spring mix, tomatoes, onions and chevre with a raspberry vinaigrette:

I scraped off some of the chevre as I just wanted “a taste” of it, but otherwise ate it all.

Once we stepped out of the restaurant, it was freezing cold and we were in dire need of a hot beverage to warm ourselves!

NF Cappuccino

I ordered a tall, non fat capuccino with cinnamon on top. This really hit the spot!
