Yup, winter has begun….

Snow….slush…ice….mud…..winter storms…….

Winter Storm

It took about an hour to get home this morning, despite it normally being a 20 minute drive. What is it about the first snow storm that causes people to forget how to drive???

Anyhow, by the time I got home I was very hungry so I made a super quick, super satisfying breakfast:

Eggs and melba toast

Lunch was my 2 old faithfuls: salad and a green monster:

Salad and GM

For my salad I used:

  • mixed greens
  • campari tomatoes
  • baby carrots
  • 1/2 avocado
  • spanish onion
  • 1/3 C kidney beans
  • 1 tsp olive oil, balsamic vinegar, kosher salt & ground pepper

And my GM:

  • 3 leaves of kale
  • 1.25 C 1% milk
  • 1/2 frozen banana
  • 1 TB plain nonfat yogurt
  • 1 TB flaxseeds

And while I’ll be having dinner at work, here’s what my hubby prepared for me:

Catfish and mushrooms

Cajun catfish and button mushrooms in cajun spices and sriracha sauce. I’m only going to bring 1/2 of the fish with me and I’ll bring along some baby carrots and clementines.

My dinner last night: I had packed some almonds and fruit for dinner last night at work but this definitely was NOT enough for me and I ended up snacking on some candied nuts we had at work and had 2 Glo Bars I had stashed in my work locker.

I have come to recognize that ingesting large amounts of sugar will leave me with unsteady blood sugar levels for about a day or two and I’ll have all sorts of cravings. When this happens, I usually up the protein, good fats and water and it slowly takes care of itself.

How do you deal with cravings and unsteady blood sugar levels?

Apart from the cravings, which are subsiding, I am feeling well. I’m definitely looking forward to hitting the gym tomorrow. Tonight is my final night shift (and they’ve been pretty brutal–virtually no sleep breaks) and I’ll have a few days off after that. 🙂

Onward and Upward….

Hey all!

So my day started at 2pm when I awoke after my night shift. I had a horrific headache that pounded with every step I took. My surefire cure:

water and GM

I also had a great big mug of English Breakfast tea with a bit of 1% milk. The GM had kale, banana, 1% milk, plain nonfat yogurt and flaxseeds. My headache was gone within about 45 minutes. 🙂

For lunch, I invited a new friend over for some salad:

Balsamic Vinegar

I thought I’d try something different. I’ve tried a LOT of different balsamics and I had always seen this one at my grocer’s so I thought I’d give it a go!

Lunch:

Salad

My salad:

  • mixed greens
  • campari tomatoes
  • baby carrots
  • 1/2 avocado
  • spanish onion
  • dressed in balsamic vinegar, olive oil, kosher salt and ground pepper

The balsamic was tasty but very subtle in flavour. I had to use more than I would usually use and it still somewhat lacked both the sweetness and acidity that I would normally expect from a premium balsamic.  It wasn’t terrible, just not the best I’ve had.

Along with my salad I had some Allegro skim milk cheese and a high protein pita:

Ola!

Hope everyone had a great day! I started off my day with a GM:

GM

Just the usual stuff: kale, banana, 1% milk, vanilla yogurt and flaxseeds.

Lunch was a salad with some leftover veggies:

  • mixed greens
  • arugula
  • warmed braised fennel
  • warmed steamed rapini
  • red bell pepper
  • spanish onion
  • 1/2 diced chicken breast
  • balsamic vinegar, 1/2 tsp olive oil, salt and pepper

This was sooo good! Every bite was amazing. I do wish I had chopped up some mushrooms into it though. That would have made it perfect.

I wasn’t very hungry this evening so I just ended up having a serving of Knorr Yellow Soup with 1/2 a high protein, high fibre pita:

  • 1 large coffee with milk (only had 1/2 of it, wasn’t very good)
  • 1 medium coffee with milk (only had 1/2 of it)
  • a Starbucks tall nonfat unsweetened earl grey latte (tasty!)
  • 1 clementine

So today I went to a local mall and did a little shopping! If there is one thing to know about me, it is that I love buying beauty products–the whole experience–trying, smelling, touching, etc. I just love trying different scents and textures–whether it be a perfume, a body lotion or a shower gel. Apart from my make up and skin care, I rarely buy a product twice and always try to switch up my lotions and potions. Today I bought something old and something new:

Caudalie face cleanser

This is my go to face cleanser. I have a lot of issues with dryness, sensitive skin and rosacea and this manages to clean my face without irritation. I really enjoy a lot of their products and up until recently, used their Premiere Vendanges as my face moisturizer.

This was new:

Shower Gel

This just has a warm, scrumptious scent that makes me happy. I took my time smelling all the lovely holiday Philosophy shower gels but this one still appealed to me most. My only concern however, is that my husband may try to take a bite out of me! LOL

I was also in need of some long sleeve T’s so I bought some from Old Navy. 2 for $18 CAN is a steal!

I had an old black long sleeve T but it was way worn out from washing. While many years ago I might have refused to buy myself clothes in a “non ideal” size and keep wearing the same old stuff as a sort of “punishment”, I eventually tired of the “when I’m thin” mentality and realized that it’s now that counts. I deserve to be treated well–by others and myself. So if I need or want something, I buy it.  I also don’t need to be thin to be happy or love myself. I am happy and love myself regardless of what size I am! 🙂

Sunday Yummies

Hi all!

Hope everyone is having a lovely evening! I woke up early this morning, arranged breakfast, lunch and snacks and booted it to work!

GM and chicken salad

Breakfast was a GM made of:

  • 2 huge kale leaves
  • 1 TB flaxseeds
  • 1.25 C 1% milk
  • 1 TB vanilla yogurt
  • 1/2 frozen banana

For lunch I had mixed greens with 1 skinless roasted chicken breast dressed in balsamic vinegar and olive oil. I had half of the squash apple soup along with my salad and 1 clementine. I didn’t end up eating the other 2 clementines or the apple. I did however, have 2 large coffees with milk during my 12 hr shift.

I wasn’t sure what I was going to have for dinner until I saw a lonely bunch of broccoli sitting in my fridge:

I nuked the broccoli for a few minutes until tender and put it on top of a bed of mixed greens. I added yellow bell pepper, 1/2 avocado, red onion, tomatoes and 1/2 chicken breast. As always, I tossed it in balsamic vinegar and about 1/2 tsp of olive oil. I enjoyed this with a high protein, high fibre pita (not pictured).

Anyhow, my plans for a workout outside were thwarted by rain this evening. Not to worry, I have plans for a great big workout tomorrow afternoon.

Veggie Day!

Good afternoon everyone!

Hope everyone’s day is going well (and if not, remember it is NEVER too late to turn your day around 🙂 ).  I woke up and started my day off right with some green goodness:

Green Monster

This baby had in it:

  • 3 kale leaves
  • 1 TB flaxseeds
  • 1 dollop vanilla yogurt
  • 1/2 frozen, overripe banana
  • 1.25 C 1% milk

While I was calculating my calories in yesterday’s eats, I got curious about the amount of protein in this GM as I honestly didn’t think it would be much and was concerned that it perhaps wasn’t a balanced breakfast. Did you know that this baby has 22 GRAMS of protein in it?! WOW!!! No wonder I feel full–fibre, good fats, protein…what’s not to love???

For lunch, I debated between several different options but really just wanted something warm and comforting. Since I’m already planning on making soup this evening, I made an herbed, goat cheese frittata!

To make frittata for one (me!), I used:

  • 2 eggs
  • 1/8 C 1% milk
  • Salt and pepper to taste
  • parsley
  • chives
  • thyme
  • 1 shallot–finely chopped
  • 15 g (half a serving) of chevre

I used PAM cooking spray to cook. This was absolutely divine! I ate this really slowly and just savoured all the flavours. I had a large mug of coffee with about 1/3C 1% milk in it after lunch.

Since I realized I hadn’t had anything with any meat or poultry so far, I decided I would continue the day meat free. Tonight I’m going to make my Butternut Squash & Apple Soup. I’ll post the recipe plus photos this evening.

How to get out of a funk

Ever feel like you just woke up on the wrong side of the bed? That certainly was the case with me today. First off, I overslept and ended up waking up at around 1pm–I actually still thought it was early morning when I woke up because the room was so dark. I pulled myself out of bed, clomped downstairs in my slippers and noticed that the whole main floor was dark. The clock on the wall said 1:13 pm. I head on over to my front door and this is what greets me:

What a gloomy, gloomy day. I felt as if I had automatically woken up in a bad mood. I felt tired, my head hurt and I just felt like crawling back into bed. I knew that ultimately I would be better off just carrying on with my day, so I prepared my arsenal…

I started off with 3 glasses of water as I figured I was probably dehydrated. That didn’t seem to help. I then made a Green Monster out of 2 kale leaves, 1TB flaxseeds, 1/2 frozen banana, 1TB vanilla yogurt and 1.25 C 1% milk.  After taking a couple swigs of my Green Monster, I started to feel more alert.

Slowly, as I sat beside the fireplace in my living room, my headache faded away and I began to feel less fatigued. By the time I finished the last of my ceylon tea I felt much more like myself. I was able to convince myself to get dressed and head over to the gym.

I ended up doing 35 minutes on the treadmill–I walked at a 3.5 mph pace on an incline of 8-11, maintaining a HR of 150 bpm. I can’t tell you how much better I felt after my workout! This combination of water, Green Monsters, tea and exercise really did the trick and lifted me out of a very bad funk! I will definitely have to keep this in mind should this happen again.

On my way home, I ended up meeting up with a friend for coffee–just a regular coffee with some 2% milk. Once home, I inhaled an orange and began to prepare dinner:

Linguine with clams

I made spelt linguine with a baby clam sauce. This was delish! For the sauce I used: garlic, shallots, parsley, white wine, olive oil,  tomato sauce and 1 can of baby clams. I added in salt, pepper, crushed red pepper flakes and oregano to taste. I don’t have any quantities as I didn’t measure anything other than the olive oil (1.5 tsp for 2 servings). To garnish, I sprinkled grated parmesean and added fresh parsley.  To finish, I had some mixed greens dressed in olive oil (1 tsp) and balsamic vinegar.

Sunday’s Eats

Hubby and I both started off the day with a Green Monster. I made this with 5 kale leaves, 2 TB flaxseed, 1 banana, 1 clementine, 2.25 C vanilla unsweetened almond milk and 1/2 C vanilla yogurt:

I sipped on this as I watched the latest Top Chef. Things are getting SO good on that show. I’m totally rooting for Kevin to win!

Lunch was some steamed rapini with the other day’s grilled zucchini. I carved up about 3/4 grilled chicken breast.

Dinner for tonight will be a Knorr  Rustic Vegetable and Potato Soup with a high fibre, high protein pita. Snacks are a handful of cashews and 2 clementines. I packed this all up after photographing it so that I can enjoy it tonight at work!
