Hi all!
Hope your day is going well! I started off my day with a great workout at the gym. I did 55 minutes on the elliptical without even realizing as I was immersed in a magazine article! Oops. Anyhow, the HR monitor wasn’t working but I worked it pretty hard and really ENJOYED my workout! So far no more soreness.
Right after my workout I gobbled a teeny tiny clementine…

And after my morning shower, I had an interesting breakfast…a BREAKFAST PITA!!!

I used:
- 1 high protein, high fibre pita
- 2 eggs sunny side up with yolk partially cooked so as not to make them too runny! (cooked with PAM cooking spray)
- some greens
- sliced tomato, onion and pickle
- whole grain mustard

Mmmm….this was delightful!
And for lunch, I was unable to use the recipe I intended to use due to time constraints, so I made a Curried Carrot Soup:

Wow, I like heat in my food but this was TOO MUCH! I will post the recipe when I am able to get my spices right. I did however use 2 tsp of olive oil and 1 tsp butter for the whole recipe instead of what was listed. I also used light sour cream. Otherwise I followed exact instructions. I ended up eating half of this bowl of soup.
Anyhow, I’m off for the day–off to babysit my niece and nephew. Dinner will be something from Swiss Chalet–most likely some skinless chicken breast and salad.
